Lemon Cream Cheese Bars

Ingredients:

  • 1 cup all-purpose flour
  • 1/2 cup confectioners’ sugar
  • 1/2 cup butter, softened
  • 1 (8 ounces) package cream cheese, softened
  • 1/2 cup granulated sugar
  • 2 large eggs
  • 3 tablespoons fresh lemon juice
  • 1 teaspoon lemon zest
  • 1/2 teaspoon vanilla extract

Directions:

  1. Preheat your oven to 350°F (175°C). Grease a 9×9-inch baking pan.
  2. In a mixing bowl, combine the all-purpose flour, confectioners’ sugar, and softened butter. Mix until crumbly.
  3. Press the mixture evenly into the bottom of the prepared baking pan.

  6. Add the eggs, one at a time, beating well after each addition.

  9. Return the pan to the oven and bake for an additional 20-25 minutes, or until the filling is set.
  10. Remove from the oven and let cool completely in the pan on a wire rack.
  11. Once cooled, refrigerate for at least 2 hours before cutting into bars.
